Egg White Delight!

Omelets happen to be one of my FAVORITE meals! Like bacon, I can eat it anytime of the day! So versatile, one can create an array of variations to strike your fancy! Today I made an amazing rendition, based on my most beloved ingredients, costing me less than $1.00!  This serving is for one person so multiply the ingredients by number of servings.

Ingredients

Instructions
  1. Heat 1 Tsp of Extra Virgin Olive Oil over medium heat and add onions and mushrooms. Cook for 5 minutes. Optional to add tomatoes in there.
  2. Add garlic and chicken and continue sauteing for 3 more minutes.
  3. Remove the onion, mushrooms, garlic, and chicken and set aside.
  4. Heat 1 Tsp of Extra Virgin Olive Oil and add scrambled egg and egg whites into pan under medium-low heat. Make sure the egg does not stick to the pan. Constantly move it around to fluff it up until it is a sticky solid consistency.
  5. Once it is a sticky solid, add the shredded cheese to one half of it. On top of that add chicken chunks. Then add saute mushrooms, onion, and garlic. Let cook for 2-4 minutes longer until the stickiness dissipates and more thoroughly cooked. Fold the side of the omelet that does not have any ingredients over on top of the side that has all the ingredients piled up. Sit for a minute or so and turn off the stove. The cheese should be all melted.
  6. And Wha- La! A Beautiful Egg White Delight!
