Green Eggs and Sausage

  1. Preheat oven to 425 degrees F. Lightly butter 8 by 8 inch baking dish.
  2. Heat oil in a medium skillet over medium high heat. Add onion and mushrooms and cook 3 minutes until translucent.
  3. Add sausage and cook for about 4 minutes. Break up in smaller pieces with spatula.
  4. Add chopped broccoli, garlic, and about 1/4 cup of water to add a little moister. Cover for 4 minutes until broccoli is bright green. Set mixture aside to cool down.
  5. In a large mixing bowl, whisk eggs, milk, salt, and pepper until smooth. Add 1/2 cup of both cheeses and green onions.
  6. Mix onion, sausage, broccoli, and garlic mixture. Pour batter in the prepared buttered baking pan.
  7. Sprinkle remaining cheese on op. Bake 20-25 minutes or until golden brown.
  8. Cut the baked omelet into wedges and sprinkle remaining onion on top before serving.
